When I was growing up, this chocolate coconut slice was a staple. Mum had an old recipe book from her school days and this recipe was in it. Going through the book as a child was an adventure in itself. The pages somehow we the thinest threads held together and you knew that if you pulled just a little too hard, the whole book would be on the floor in a pile of papers. Nobody wanted to be the cause of destroying this family heirloom!
So when we make this chocolate coconut slice, it is something very special. Nothing tastes better than something from home. The two-layer slice is literally delicious! The chocolate base is a soft, chewy layer that is later topped with a simple chocolate icing that just melts in your mouth. You won’t be able to stop at 1 (or even 3!) pieces, it’s that delicious!
To make a Chocolate Coconut Slice, you need the usual cake ingredients: flour, eggs and sugar. To make it extra special you will also need the following ingredients:
The best way to store any leftover slice is in an airtight container in the fridge. We usually cut the slice into small pieces so that it is easy to grab. This also helps if you want to eat the whole slice at once, as you can grab a slice and walk out of the kitchen.
