Chilli Con Kerne is a great vegetarian spin on the original Mexican dish “Chilli Con Carne”.
It is such a delicious, hearty meal that is perfect for when the evenings start to become cooler. This dish has to be one of my favourites for when all I want is a good warm comforting meal. The rustic tomato taste combined with the sweetness of the corn kernels are just a perfect combination.
Not only is this recipe full of basic nutritious ingredients that can be easily sourced but it can be easily manipulated depending on what you are craving or have on hand.
I would highly recommend serving this meal with a few slices of freshly baked sourdough or my favourite, garlic bread. Yummm!
